Here, Allora and Arrosta channeled the spirit of their family’s recipes and made a plan to take their favorite Italian flavors to Texas. But, where was the best city to start? Austin…no…Houston…eh…ah, San Antonio, allora!

Allora set out to bring the delicate romance of the Italian coastline to San Antonio through colorful dining spaces and fresh summer flavors. Beautiful and refined, Allora adds a stroke of elegance and style to everything she touches, from her housemade pasta to freshly prepared seafood dishes to warm hospitality. As she gazes out over her transportive dining room and expansive outdoor loggia dotted with bright umbrellas, she watches guests linger over Italian wines, spritzers, crudi, and pasta. The Team Behind Allora

Pete Selig

President - Peter Selig

Peter Selig, the president of Maverick Restaurant Group, has more than 20 years of experience producing some of San Antonio’s favorite dining establishments, including Maverick Texas Brasserie, Ácenar, and Biga. With the Allora and Arrosta concepts, he intends to redefine the expectation of Italian food in San Antonio, drawing on the diversity of the traditional Italian culinary arts and the modern creativity of New York.

Robbie Nowlin, chef

Chef/Partner - Robbie Nowlin

Chef Robbie Nowlin began his culinary career in San Antonio, working under acclaimed chef Jason Dady. During that time, he earned a AAA Four Diamond Award and cooked at The James Beard House. After being named “Best Young Chef,” he took his culinary career to California. He worked in world-renowned kitchens, including The French Laundry in Napa and Otium in downtown LA. Now, he is excited to return home and share his creative flair for coastal Italian cuisine and pasta.

General Manager - Dwayne Collins

Dwayne Collins leads a team of dedicated staff and directs friendly service rooted in Southern Italian hospitality to create unforgettable experiences at the Allora and Arrosta restaurants.

Director of Beverages - Francisco Chagolla

Francisco Chagolla curates the beverage programs at Allora and Arrosta, delivering Southern Italian reverie through craft cocktails, Italian spritzers, and a European selection of wines and beers.

Joshua Thomas, named “Best New Sommelier” in 2013 by Wine & Spirits Magazine, brings his expert knowledge of Italian wines to Allora and Arrosta.
