The story of the sisters begins on the winding streets of Italy’s scenic Amalfi Coast, just a short journey from Naples and Rome. Here, Allora and Arrosta channeled the spirit of their family’s recipes and made a plan to take their favorite Italian flavors to Texas. But where was the best city to start? Austin…no…Houston…eh…ah, San Antonio, allora! 

Arrosta set out to ignite a flame, pouring her fiery attitude into Mama’s classic Italian recipes and designing a space that reminded her of her favorite corner trattoria back home. Casual and fun, Arrosta’s energy brings soul-satisfying comfort to the restaurant, from the housemade pasta to the famous chicken parmigiana bigger than the plate.

The Team Behind Allora

President - Peter Selig

Maverick Restaurant Group President Peter Selig has over 20 years of experience producing some of San Antonio’s favorite dining establishments, including Biga and Acenar. Now, he aims to redefine the culinary scene once again with concepts that bring big city style at affordable prices. He invites you to experience Allora, Arrosta, and Maverick Texas Brasserie.

Director of Hospitality - Brannon Swindle

Director of Hospitality Brannon Swindle leads the Maverick Restaurant Group teams across Allora, Arrosta, and Maverick Texas Brasserie. Rooted in friendly service and Texan hospitality, he creates unforgettable guest experiences that delight. He’s previously worked on the management teams of other San Antonio fine favorites, including Cured and Cappy’s.

Chef de Cuisine - Alyssa Bobalik

Chef Alyssa Bobalik marries her love of classic Italian flavors and Texan flair to deliver a new take on Italian street food alongside Chef Christopher Carlson.
